I’m gonna be really honest. This might be my favorite mocktail recipe I’ve ever created so far.
My aim was to create a mocktail that had a typical sour cocktail build but also without the use of egg white since I know a lot of people are still nervous about egg whites in their drinks. The egg white substitute used in this mocktail joins seamlessly well with the rest of the ingredients, which makes it a must try mocktail recipe!
It’s far too easy to sip and you’ll be asking for the next round after the first taste.

Ingredients
These are the ingredients that you will need to make this must try mocktail recipe:
- Aquafaba: This is the egg white subtitute I was mentioning earlier in this post. Aquafaba is basically the juice of chickpeas from a can. The texture of aquafaba is similar to egg white, so it creates a nice velvety texture throughout the mocktail and adds a nice layer of foam on top. Because aquafaba has a flavor to it that gives a slight nutty taste to the drink, it also pares really well in cocktails with aged spirits like bourbon, if you want to go the alcohol route. If I haven’t sold you on aquafaba yet, and your not afraid of egg whites, then by all means use an egg white in this mocktail instead. The last note I want to add is that aquafaba stores good in the fridge for up to 5 days.
- Demerara Syrup: Demerara syrup is basically a brown sugar syrup. If you want to learn how to make it, here is a recipe for you. It’s super simple to make because it only has 2 ingredients.
- Lemon Juice: This is super necessary because it will brighten up blend all the complex flavors from the other ingredients.
- Grapefruit bitters: Fee Brothers have a lot of non-alcoholic bitters that you can use in cocktails. These grapefruit bitters also help liven up the cocktail from the other rich, darker flavors.
- Chamomile Tea: I will be using a loose leaf chamomile tea, but of course use whatever chamomile tea you have available to you!
First let’s start with making chamomile tea.
I get almost all my loose leaf tea from my local tea and spice shop. I love loose leaf tea because I feel like the flavor is a lot more vibrant and I like to support my local businesses in any way I can.
Essentially we’re just gonna make chamomile tea. If you are using tea bags, depending on how big of a batch of tea you choose to make you may need to use multiple tea bags to make it more potent.
For reference, the ratio I’m using is 1 tablespoon chamomile to 1 cup of water.
First, were going to heat our water in a pot on the stove and bring it to a boil.
Once the water is boiled, add in your chamomile, stir it a little bit, cover the pot with a lid, turn the heat down to a low simmer and let it sit for 15 minutes to really extract the flavors.
After the 15 minutes is up, using a cheesecloth or nut milk bag, strain off the chamomile from the tea and you’re pretty much done.
Chamomile Sour Mocktail Recipe
Now let’s get into this must try mocktail recipe!
Here’s how to make the chamomile sour
In a shaking tin
2 oz chamomile tea
3/4 oz aquafaba
3/4 oz demerara syrup
1 oz lemon juice
2 dashes grapefruit bitters
Dry shake (aka shake without ice) for 15-30 seconds to emulsify the aquafaba.
Then shake with ice (Because the chamomile tea already has a lot of water. I advise to shaking this mocktail either with a large ice cube or with a lot of ice for a short amount of time in order not to over dilute the drink while still frothing up the aquafaba).
Strain the cocktail into a stemmed glass. I prefer a coupe glass.
Garnish the mocktail with a chamomile flower or lemon express.

In a shaking tin
2 oz liquor of choice (I think applejack pairs really well, but really any spirit will work great)
1 oz lemon juice
3/4 oz aquafaba
3/4 oz chamomile infused demerera syrup (basically follow the demerara syrup recipe and just swap the water for chamomile tea instead).
2 dashes grapefruit bitters
Dry Shake
Then shake with ice
Strain into a stemmed glass
Garnish with a chamomile or lemon express
