Imagine yourself sitting on a beach in Barbados sipping a rum and coke vanilla ice cream float. That is exactly the vibe this cocktail giving. It instantly transports you on a Caribbean vacation, and it is surely delicious.
I was inspired to come up with this drink after learning that Rihanna (an incredibly accomplished Barbadian singer & businesswoman. Seriously, if you don’t know who Rihanna is, are you living under a rock?) was performing at the 2023 Superbowl.

Basically my concept was to take a beloved American classic drink, the rum and coke, and give it a little Caribbean spin. And to toot my own horn, man oh man is this drink good!
I call this drink the Rihanna Rum and Coke. So let’s get into it!
Rihanna Rum & Coke recipe
In a shaking tin
1/2 oz lime juice
1/2 – 3/4 oz (a good squeeze) cream of coconut
2 oz aged Barbados rum
Add ice and shake
Strain into a rocks glass with ice
Top it off with vanilla coke (you can also use regular coke, but make sure you get a vanilla flavor in there somewhere. If you use vanilla extract you should probably add it in before you shake the cocktail)
Garnish with a lime wheel
