Why GHOST DONKEY Las Vegas is one of the BEST TEQUILA BARS on the Strip

On my most recent trip to Las Vegas it was my mission to find the best cocktail bars on the strip. As a bartender and tequila fan I made sure to stop by the tequila speakeasy Ghost Donkey Las Vegas, and I gotta say it definitely exceeded my expectations.

This post is all about my experience at Ghost Donkey Las Vegas!

Ghost Donkey Las Vegas

Quick Facts/History

  • Ghost Donkey has been in Las Vegas since 2018
  • Ghost Donkey is known for their tasting flights and craft cocktails with emphasis in Mexican agave spirits
  • Hours: Sunday – Thursday: 4pm – 12am. Friday – Saturday: 4pm – 2am

Where to find this speakeasy

Ghost Donkey is located in the Cosmopolitan Las Vegas inside the Block 16 Urban Food Hall. It’s tucked away in the back corner behind a door that has a picture of a cute donkey on the front.

Reservations

They don’t take reservations so first come first serve!

What to Expect

When entering Ghost Donkey Las Vegas the first thing that catches your eye is the lit up ceiling. The bar is very small with limited seating, If it’s busy, you may need to stand and it may be a bit hard to move around. You can order from the bar or from the cocktail server. 

They have an extensive array of agave spirits that come from all over different regions of Mexico to choose from. I’ve never seen a mezcal list as large as this before, which makes it a must-visit if you are a big tequila and agave spirits fan!

There are a couple of Mexican beer options and no wine options.

Food

They have a small appetizer and shareable foods menu with different types of nachos, chips, guacamole, and salsa.

Cocktails

As said before Ghost Donkey is most known for their craft cocktails using agave spirits. 

The first drink I had of the night was the Lavender Vida Loca.

Up front you taste flavors of grapefruit and salt. The overall body of the cocktail is light on the palate. The lavender and elderflower is super subtle. Then you get the smokiness from the mezcal.

No one flavor necessarily overpowers the others and this cocktail was definitely more on the tart side. You get a salivating sensation at the end which makes you want to take another sip of the cocktail.

The second cocktail I had was the Smoked Corn & Coconut Manhattan.

Off of first appearances I absolutely loved the corn husk garnish, I thought it was a really unique touch.

Taste-wise, the mix between the mezcal and the whiskey is stunning. It has a smokey flavor similar to scotch but mezcal is so uniquely different because since it comes from the agave plant it adds a subtle sweetness.

The coconut is almost not noticeable but it does add a nice buttery flavor similar to coconut oil. Texture-wise the cocktail was medium bodied and silky smooth.

Definitely a cocktail I wouldn’t mind drinking again!

When is the best time to come?

I’ve heard that the best time to come is when they first open, but since the location is quite small it can fill up pretty fast. Throughout the time of my stay there, I noticed there were some moments where it was busier than other moments. With that being said, I personally think you can just show up whenever and hope that it’s not too crowded when your there.

Other things to do in the area

Well it is Las Vegas so you can do all the things Las Vegas is known for including gambling, drinking, eating, watching shows and more.

Fly Girl Synopsis

The overall vibe at Ghost Donkey Las Vegas is really chill and intimate. It’s a really great place to have a conversation with someone. The lights and music add a nice ambiance and the cocktails were very tasty. Fly Girl Approved!
